All White Malvasia of Candia grapes are harvested manually.
After pressing and removal from the bunch and maceration with the skins for eight hours, the must bloom is separated (50 % yield) which subsequently undergoes a static refining and a slight clarification.
The subsequent fermentation is controlled until the sugars are almost entirely depleted.
At the end of winter, it is put inside an autoclave according to the charmat method, thus obtaining the introduction of effervescence.
The operations of stabilization and filtration precede the bottling.
