All White Malvasia of Candia grapes are harvested manually.
After pressing in a wine press, the draining must (about 50 %) is set to ferment.
The fermentation is blocked at a sugar level of about 10°, thus allowing a sweet wine with low alcohol content.
At the end of winter, it referments in an autoclave according to the charmat method, thus obtaining the introduction of effervescence.
Cold tartaric stabilization and filtration precede bottling in isobaric conditions.
